- Thành phần:
- ARABICA
Cà phê Arabica hay còn gọi là cà phê Chè theo tiếng Việt có nguồn gốc từ các loại cà phê bản địa của vùng Cao Nguyên Tây Nam Ethiopia. Đây là một trong những giống cà phê đầu tiên được trồng và vẫn chiếm vị trí chủ đạo trong cơ cấu ngành cà phê trên thế giới cung ứng cho khoảng 70% sản lượng toàn cầu. Chúng thường có chất lượng rất cao, nhưng rất nhạy cảm với các sâu, bệnh hại.
- ROBUSTA
Robusta hay còn được gọi với tên khác là cafe vối thuộc giống Canephora, là một trong hai loại cà phê được trồng thương mại chủ yếu trên thế giới. Robusta còn là giống chủ lực của ngành cà phê Việt Nam, góp phần giữ vị trí thứ 2 về sản lượng cà phê thế giới chỉ sau Brazil.
- Quy trình cà phê Arabica:
Thu hái, chế biến và bảo quản cà phê Arabica là những khâu quan trọng ảnh hưởng đến chất lượng sản phẩm cà phê Arabica.
- Thu hái:
Yêu cầu đầu tiên đối với việc thu hái cà phê là hái đúng đúng tầm chín. Hái cà phê bằng cách dùng ngón tay bứt quả, không tuốt cành, không bứt cả chùm đối với cà phê chè.
- Chế biến:
Cà phê hái xong phải chế biến ngay. Bao bì đựng sản phẩm cà phê quả tươi và phương tiện vận chuyển phải sạch, không có mùi phân bón, mùi hóa chất… Do mùa thu hoạch thường là mùa khô nên người ta áp dụng chế biến khô để tận dụng năng lượng mặt trời. Quả cà phê đưa về không xát tươi mà đưa ra phơi khô cho đến khi độ ẩm xuống còn 12-13%. Thường 1 mẻ cà phê phơi khô mất 25-30 ngày.
- Bảo quản:
Cà phê rang xay thành phẩm (đã bao gói) được đóng vào thùng carton với trọng lượng 20kg/thùng để bảo quản. Bảo quản nơi khô ráo, thoáng mát.
